Baked Beans and Chilli Tuna Shakshuka

Makes 4 servings


  • 500 ml water
  • 90 g of quinoa
  • 270 ml coconut milk
  • 1 tablespoon brown sugar
  • 35 g dried fruit (apricot, cranberries, blueberries, raisins or goji berries)
  • 15 g walnuts
  • honey, to taste



  1. In a medium saucepan, combine water and quinoa. Bring to a boil.
  2. Reduce heat to a simmer and cook for 15 minutes until liquid has been absorbed.
  3. Stir in coconut milk and sugar, then cook it to a creamy consistency.
  4. Serve into bowls and top with dried fruit, walnuts and honey.
