Makes 4 servings
- 500 ml water
- 90 g of quinoa
- 270 ml coconut milk
- 1 tablespoon brown sugar
- 35 g dried fruit (apricot, cranberries, blueberries, raisins or goji berries)
- 15 g walnuts
- honey, to taste
- In a medium saucepan, combine water and quinoa. Bring to a boil.
- Reduce heat to a simmer and cook for 15 minutes until liquid has been absorbed.
- Stir in coconut milk and sugar, then cook it to a creamy consistency.
- Serve into bowls and top with dried fruit, walnuts and honey.
